Sierra Nocturna drifts in from Chiapas, Mexico — a Mountain Water Process decaf that uses pure spring water from the region’s highest peaks to gently strip caffeine (99.9% caffeine free) while keeping the soul intact. Grown by smallholder producers and delivered to the San Cristóbal de las Casas and Yajalón stations, this Bourbon, Caturra, Typica and Catuaí mix sits at 1,000 meters and brews low-acid, mellow cups with soft nutty chocolate tones — perfect for winding down after the roam.

18g in • 36g out • fine grind • 26–30 s extraction for a rich, silky shot
Aeropress
16g coffee • medium‑fine grind • 60g fresh boiled water, 15s bloom, another 170g water and stir • 20-30s slow press at 3 min until hiss.
Moka Pot
16g coffee • 110g water • medium-fine grind • remove at first gurgle
French Press
30g coffee • 480g water • coarse grind • 4 min steep • break crust and skim for rich, rounded body
V60
