The Origin Story

The Producer

Both coffees come from Brazil’s coffee-rich Minas Gerais, where farmers like Pedro and Mariana Gabarra lead sustainable production across family-run estates. Their work combines precision farming with deep environmental stewardship, restoring native forest and protecting wildlife while crafting specialty-grade coffee.
The Land

Minas Gerais offers steady altitude (around 1,000–1,200m), mineral-rich red soil, and a mild climate — perfect for growing Mundo Novo and Catuaí varietals. The shared terroir of both coffees gives them a common foundation: chocolate depth, balanced sweetness, and low acidity.
The Craft

Velho Camino is naturally processed and roasted light-medium to showcase clarity, chocolate-nutty warmth, and subtle fudge notes — ideal to start your day. Caminho Dusk is Swiss Water decaffeinated and roasted medium-dark to preserve its origin character while offering smooth, deep comfort without the caffeine. Together, they make a full-cycle ritual: one for the roam, one for the unwind.

18g in • 36g out • fine grind • 26–30 s extraction for a rich, silky shot
Aeropress

16g coffee • medium‑fine grind • 60g fresh boiled water, 15s bloom, another 170g water and stir • 20-30s slow press at 3 min until hiss.
Moka Pot

16g coffee • 110g water • medium-fine grind • remove at first gurgle
French Press

30g coffee • 480g water • coarse grind • 4 min steep • break crust and skim for rich, rounded body
V60

20g coffee • 320g water • medium grind • 45 s bloom • total brew ~2:45 for a balanced brew
