Sierra Nocturna drifts in from Chiapas, Mexico — a Mountain Water Process decaf that uses pure spring water from the region’s highest peaks to gently strip caffeine (99.9% caffeine free) while keeping the soul intact. Grown by smallholder producers and delivered to the San Cristóbal de las Casas and Yajalón stations, this Bourbon, Caturra, Typica and Catuaí mix sits at 1,000 meters and brews low-acid, mellow cups with soft nutty chocolate tones — perfect for winding down after the roam.

A fine to medium-fine grind, perfect for espresso machines and moka pots. It’s also an excellent choice for filling your Nespresso® reusable pods at home.

The Origin Story

The Producer

Sierra Nocturna is grown by smallholder farmers across the Chiapas Turquesa region of southern Mexico. These families cultivate Bourbon, Caturra, Typica, and Catuaí varietals on modest plots, passing down techniques refined over generations. Their cherries are delivered to the buying stations of San Cristóbal de las Casas and Yajalón, where community networks link remote farmers to the wider specialty coffee market.

The Land

Set at roughly 1,000 meters along the slopes of Chiapas’ northern highlands, the region is defined by volcanic soils and lush mountain forests fed by glacial springs. While this altitude is lower than some of Mexico’s highest farms, it yields larger beans with a smooth, low‑acidity profile, distinct to this part of the coffee belt.

The Craft

This coffee is decaffeinated using the Mountain Water Process, which draws pure water from Mexico’s tallest peak to gently remove 99.9% of caffeine without chemicals. The process preserves the character of the beans — mellow, balanced, and quietly expressive of their Chiapas origin.

16g coffee • 200g water just off boil • medium‑fine grind • 10g water 5s bloom, then 190g water stir 5s • 30s slow press at 1:30 until hiss

Moka Pot

16g coffee • 110g water • medium-fine grind • remove at first gurgle for nutty-chocolate balance

French Press

30g coffee • 480g water • coarse grind • 4 min steep • break crust and skim for clean mellow body

V60

20g coffee • 320g water • medium grind • 45 s bloom • total brew ~2:45 for smooth sweetness and clarity
